Carrot Cake
Ingredients
2 cups sugar
1 1/2 cups oil
4 eggs
2 cups flour
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
3 cups shredded carrots (about 6 medium carrots)
1 cup chopped walnuts
Preparation
- Blend sugar and oil until moist
- Add eggs 1 at a time, mix well
- In a large bowl, sift together flour, salt, cinnamon, baking powder and soda
- Add egg mixture to the flour mixture and mix until completely blended
- Add carrots and walnuts
- Pour into 9x13" baking pan
- Bake at 300* for 40 minutes.
- Let cool, then top with cream cheese frosting and sprinkle with walnuts.

1 teaspoon vanilla
1 8 oz. package of Philly Cream Cheese
1 1 pound box of powdered sugar
1/2 stick butter
Preparation
- Mix all ingredients in a bowl on medium high until creamy.
